Swahili Cooking
This is a lesson in a real kitchen, either in Stone Town or in a home that hosts small groups. You start with what Zanzibari cooking actually uses: coconut milk grated by hand, cloves, cardamom, lime, and fish or chicken or vegetables depending on the day and your diet. Typical plates include pilau or a coconut curry, chapati or mandazi, and a simple salad. The kitchen we use can cook halal; say so and it is arranged, including separate utensils where that matters to you. You eat what you made. It is not a restaurant performance.

Do children join in?
Yes. Chapati is the part they usually take over.
